  • Heat oven to 350ºF.
  • Combine flour and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Blend in egg yolks and vanilla. Gradually add flour mixture, mixing well after each addition.
  • Shape dough into 40 (1-inch) balls; place, 4 inches apart, on baking sheets. Press thumb into center of each ball.
  • Bake 13 to 15 min. or until edges are lightly browned. Cool on baking sheet 1 min. Remove to wire racks; cool completely.
  • Meanwhile, combine dry pudding mix and dry gelatin mix in medium bowl. Add boiling water; whisk 1 min. Refrigerate 15 min. or until slightly thickened.
  • Spoon pudding mixture into centers of cookies, adding about 1/2 tsp. to each.

How to Use the Remaining Pudding Mix

Beat remaining pudding mix (from 3.4-oz. pkg.) and 1-1/2 cups cold milk in medium bowl with whisk 2 min. Refrigerate until ready to serve as a quick dessert.

How to Use the Remaining Gelatin Mix

Add 1 cup boiling water to remaining gelatin mix (from 3-oz. pkg.); stir 2 min. until completely dissolved. Stir in 2/3 cup cold water. Refrigerate several hours or until firm.

The lemon curd filling was great...not too sweet and not tart. I doubled the lemon curd recipe using 1 tsp. per cookie instead of 1/2 tsp. I will definitely be making these again.

Like others have stated, there wasn't enough filling and mine were terribly mishapen after baking. After a couple days in an airtight container they were soggy as heck. I would have been embarrassed to include them on my trays. Didn't look like the picture at all.

The filling did not come out looking like the picture, it was too sweet, and like others mentioned, it didn't make enough for the cookies. I would suggest using purchased lemon curd or make lemon curd from scratch.

One thing I changed in the lemon filling was to replace some of the water with lemon juice. I would also make twice the lemon recipe because the original amount didn't seem to be enough.

Rated 3 out of 5 by from Not what it seems made recipe as written - got 46 cookies (used 1 inch cookie scooper) but only enough curd for 19 cookies. lose a lot of the thumb depression when baking (mine took 13 min). do not spread when baking so 4 inch separation seems excessive. taste is nice though.
