Lemon-Ginger Refrigerator Roll

What You Need

pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding

cup cold fat-free milk

1-1/2

cups thawed COOL WHIP LITE Whipped Topping

NABISCO Ginger Snaps

Make It

BEAT pudding mix and milk in medium bowl with whisk 2 min. Stir in COOL WHIP.

SPREAD about 1-1/2 tsp. pudding mixture onto each cookie. Stack cookies, then stand on edge on platter. Frost with remaining pudding mixture.

REFRIGERATE 8 hours. Cut into diagonal slices to serve.

Dessert needs to be refrigerated at least 8 hours before serving to allow the cookies to soften to the desired cake-like texture. If desired, dessert can be stored in refrigerator up to 24 hours before serving.

This was a delicious combo. My family and friends really liked it. Next time I am going to try it with coconut cookies and cream of coconut pudding.

I made this like a desert with layers of cookies and pudding mixture topped with cool whip. Found that to be easier and just as yummy as a log. Probably will double recipe next time.

Made this exactly as written and it turned out great. Hubby loved it. and it looked just like the picture. Gonna try different cookies and puddings with this recipe.

The men at Card Club loved this! I didn't have lemon pudding - I used white chocolate pudding and it was yummy! A tip to having it look like the picture - cut on the diagonal!

this was surprisingly good. Everyone liked it.I added a row of crushed nuts on top.Only a guess here photo does not look like recipe exactly. I think they did 4 rows of cookies across and then the long row down in log shape using more then 30. Mine did not look like this when cut. Changing cookies and pudding flavors will be my next adventure.

Do you have to slice the log at a slant to get the view shown in the picture? I can't find any way to contact Kraft for an answer. Hoping someone can answer.

This was very light and perfect for summer. Going to try this with Nilla wafers or some kind of lemon cookie instead of ginger snaps.

It was good, I also did one with ginger snaps and chocolate instead of lemon. Guests preferred the chocolate. Next time I'm trying graham crackers or vanilla wafers with either vanilla or strawberry pudding.
