Lemon-Honey Grilled Chicken

What to do with a whole chicken? Why, marinate it in a dressing of honey, black pepper and lemon juice and toss it on the grill, of course!

What You Need

1
whole  chicken (3-1/2 lb.)
1/2
cup  lemon juice
1/4
cup  KRAFT Zesty Italian Dressing
1/2
tsp.  ground black pepper
1/4
cup  honey
1/4
cup  KRAFT Grated Parmesan Cheese

Make It

USE kitchen shears or sharp knife to spatchcock chicken. (See tip.) Open chicken butterfly style; place, cut side down, in large shallow baking dish.

MIX next 3 ingredients until blended; pour half over chicken. Refrigerate 1 hour to marinate. Add honey to remaining lemon mixture; set aside.

HEAT grill to medium heat. Remove chicken from marinade; discard marinade. Place chicken, skin side down, on grill grate; cover. Grill 1 hour 20 min. or until done (165°F), turning after 20 min. and brushing occasionally with remaining lemon mixture for the last 15 min.

REMOVE chicken from grill; sprinkle with cheese.

How to Spatchcock Chicken
If using kitchen shears to cut out the backbone, place chicken, breast side down, on cutting board. If using a knife, place chicken, breast side up, on cutting board. Cut along one side of backbone, then cut along other side of bone to remove it. Place chicken, skin side up, then press firmly to flatten.
How to Prevent Food From Sticking to the Grill
To prevent food from sticking to the grill, lightly brush the grill grate with vegetable oil before preheating the grill. Or, spray the cold grill grate with cooking spray.
