  • Preheat oven to 350°F. Mix flour and sugars in medium bowl; cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in oats and pecans. Reserve 1 cup of the oat mixture; press remaining mixture onto bottom of greased 13x9-inch baking pan. Bake 15 min.
  • Beat cream cheese, egg, lemon zest and juice in small bowl with electric mixer on medium speed until well blended. Pour over crust; sprinkle with reserved crumb mixture.
  • Bake 25 min.; cool completely. Cut into 24 bars. Store leftover bars in tightly covered container in refrigerator.

I didn't think the cream cheese mixture sounded sweet enough, so when I mixed the cream cheese, egg and lemon zest, I added 1/2 cup of sugar. It was still a little tart for my taste so when I make them again I will add 3/4 cup of sugar. But they were still very good, easy to make, they cut up nicely and looked like they would "travel well" which was important since I was using them for gifts.

Rated 2 out of 5 by from This recipe is OK, nothing special. This recipe is OK, nothing special. It's mostly an oatmeal cookie with a little bit of lemon cream cheese across the top. It's not very sweet or scruptious. I'd put it in the granola bar category. It's the same recipe as the Nikolai Lemon Nut bars. I wouldn't bother making it again.
