  • Stand 16 wafers around edge of plastic wrap-lined 8-inch square pan. Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in ice until melted.
  • Beat next 3 ingredients in large bowl with mixer until blended. Gradually beat in gelatin. Whisk in 2 cups COOL WHIP.
  • Pour half the gelatin mixture into prepared pan; cover with 16 wafers. Microwave preserves on HIGH 15 sec. or until melted; brush onto wafers. Top with remaining gelatin mixture and wafers.
  • Refrigerate 4 hours or until firm. Invert dessert onto plate; remove pan and plastic wrap. Top dessert with remaining COOL WHIP and fruit.

Cool off with a 1/2-cup serving of this colorful dessert.

Variation

Prepare using JELL-O Strawberry Flavor Gelatin and strawberry jam. Garnish with sliced fresh strawberries instead of the mixed fresh fruit.

I have made one similar to this by putting a cookie in the bottom of a lined muffin tin, top with sugar-free pudding, then top with whipped cream, chopped fruit, nuts or coconut. Delicious, especially for a large group! You can use a lot of different flavors and toppings for this one. Great basic recipe. I hope you will try several different combinations to find one you really like. =^..^=

I topped this with frozen raspberries since I couldn't find fresh in March at my local store. I made a cooked topping and sweetened it with some of the jam that went inside. Even sweetened, the raspberries were tart and when combined with the lemon the entire dessert was very tart. This is the first dessert my kids didn't like!

Everyone raves about how awesome it is. And it disappears quickly! Sometimes I'll make it with sugar-free Jello and Lite Cool Whip. It's great either way. Also, I layer it in reverse order so I don't have to flip it. Still great!

I used sugar free lemon gelatin, Splenda in place of the sugar and sugar-free raspberry preserves. I made one pan for the diabetics and one pan for the rest of us. Both pans went quickly. Next time I will make 2 pans for each variety. Everyone loved it and I gave them each the recipe. This is a keeper for sure!!!

Rated 5 out of 5 by from Delicious! Delicious! I did sub the regular Cool Whip with the extra creamy and added a touch of Mexican Vanilla. Made it for a family gathering and it was gone in no time! I've also used strawberry jello for the mousse and just mixed with strawberries. Great and easy recipe.

My husband said it was the best dessert I've ever made. I don't know why people rate this recipe poorly, if you follow the instructions you shouldn't have a problem. The texture and the flavor was great

I made this recipe for TWO Easter dinners at different homes and received rave reviews. One home had four other desserts and three of those four were not touched but they practically licked the platter this dessert was served on. No leftovers.
