  • Heat oven to 400ºF.
  • Mix cheese and seasoning. Brush chicken with oil; rub with cheese mixture.
  • Cook bacon in large ovenproof skillet until crisp. Remove bacon from skillet, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels.
  • Add potatoes and onions to drippings in skillet; cook on medium heat 5 to 10 min. or until lightly browned, stirring occasionally. Crumble bacon. Add to skillet with tomato paste, vinegar and broth; stir. Bring to boil, stirring occasionally. Add lemon slices; top with chicken.
  • Bake 50 min. or until chicken is done (165ºF).

Serving Suggestion

Serve with a mixed green salad and your favorite fresh fruit to round out the meal.

We didn't care much for the vinegar, tomato paste sauce and think next time I would maybe just use ***** of something soup or stewed tomatoes. I used Italian Seasoning I had on hand. I did fry my chicken to make it brown, removed it then added it again on top. I have a hard time putting raw chicken on top of the potatoes. But the chicken was wonderful and I would make it again.

The recipe calls for bacon in the beginning, but does not say what to do with the bacon once it has been cooked. I will add a review once I eat my meal tonight.
