Lemon-Rosemary Chicken Salad Topper

Fresh rosemary and lemon zest give this chicken salad its wonderful aroma. Put it on crackers with lettuce, and that's one tasty app!

What You Need

1
small  boneless skinless chicken breast half (4 oz.), cooked, finely chopped (about 1 cup)
1/4
cup  finely chopped celery
1/4
 KRAFT Light Mayo Reduced Fat Mayonnaise
1
tsp.  lemon zest
1/2
tsp.  chopped fresh rosemary
1/4
tsp.  pepper
2
large  leaf lettuce leaves
24
 whole wheat saltine crackers

Make It

COMBINE all ingredients except lettuce and crackers.

REFRIGERATE 1 hour.

TEAR each lettuce leaf into 12 small pieces; place on crackers. Top with chicken mixture.

Substitute
Substitute 1/4 tsp. dried rosemary leaves, crushed, for the 1/2 tsp. chopped fresh rosemary.
