Lemonade Pudding Cake

Instant vanilla pudding and lemonade mix add flavor and moistness to a yellow cake mix. Baked in a tube pan, the cake is topped with a lemony glaze.

pkg. (2-layer size) yellow cake mix

pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding

cup COUNTRY TIME Lemonade Flavor Drink Mix, divided

cup cold water

eggs

1/4

cup oil

Tbsp. warm water

cup powdered sugar

Make It

PREHEAT oven to 350°F. Mix cake mix, pudding mix, 1/4 cup of the drink mix, 1 cup water, eggs and oil in large bowl. Beat with electric mixer on low speed 1 minute. Beat on medium speed 4 minutes. Pour into greased and floured 12-cup fluted tube pan.

BAKE 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes; remove from pan. Invert onto serving platter.

DISSOLVE remaining 1/4 cup drink mix in 3 Tbsp. warm water in medium bowl. Stir in powdered sugar with wire whisk until well blended.

PIERCE warm cake at 1-inch intervals with fork or skewer completely through to bottom of cake. Gradually spoon powdered sugar glaze over cake; let stand until glaze is completely absorbed.

Can be prepared 1 day ahead. Store at room temperature under a cake dome.

This was absolutely delicious!! So moist and loved the flavor of the glaze! I am thinking about using orange kool-aid next time! Will definitely make again!

This is an excellent, moist cake for those lemon lovers. I tossed in a little extra lemon zest to give it an extra kick.

This was fantastic. I will definately make this again during the summer months. I didn't use all of the glaze as suggested by other viewers and I'm glad. It wasn't too sweet.

Made this for a get together with my husband's family. Rave reviews. Makes a lot of glaze, will half that part of the recipe next time. Tasted just like my grandmothers homemade lemon sepreme but with a lot less work. SO good, will certainly make again!

This was great!! The pudding made it very moist. I would have added more lemon to the cake though. Way too much glaze. But very very good.

I made this for a family picnic and it was quite a hit! I only used half the glaze over the cake and used the rest to toss with blueberries. I placed the glazed blueberries on top (the glaze acted like glue) and put some in the "tube middle". The glazed blueberries really jazzed it up!!
