What You Need

8
 frozen uncooked cleaned medium shrimp (1/4 lb.), thawed
1
tsp.  olive oil

Tbsp.  fresh lime juice
1
small  jalapeño pepper, seeded, finely chopped
16
 blue corn tortilla chips (about 1-1/2 oz.)
4
oz.  CRACKER BARREL Vermont Sharp-White Cheddar Cheese, cut into 16 slices
1/3
cup  guacamole
4
 grape tomatoes, quartered

Make It

HEAT grill to medium-high heat.

THREAD shrimp onto skewers; brush with oil. Grill 2 to 4 min. or until shrimp turn pink, turning once.

REMOVE shrimp from skewers; cut lengthwise in half. Place in medium bowl. Add lime juice and peppers; mix lightly.

TOP chips with cheese, shrimp mixture, guacamole and tomatoes.

Prepare using CRACKER BARREL White Cheddar Cheese with Jalapeño Peppers.
Safely Thawing Shrimp
It's great to have a bag of frozen shrimp in the freezer for a quick meal. Thaw frozen shrimp in the refrigerator, not at room temperature. Or, place the sealed package in a bowl of cold water and change the water every 10 min. until the shrimp are completely thawed.
