  • Heat oven to 375°F.
  • Combine ingredients.
  • Drop into 44 mounds, 1 inch apart, onto parchment-covered baking sheets, using about 1 Tbsp. cheese mixture for each mound. Flatten slightly with back of spoon.
  • Bake 5 to 8 min. or until golden brown. Cool on baking sheet 2 min. Remove to wire racks; cool completely.

How to Crush the Potato Chips

Use pulsing action of food processor to process the chips until finely crushed. Or, place chips in resealable plastic bag. Squeeze excess air from bag, then seal bag. Crush chips into crumbs by rolling a rolling pin over bag until chips are finely crushed.

I needed something easy as I didn't have time to make anything last night. I made 1-1/2 recipe as written. Because we have quite a few vegetarians, I made 1/2 recipe omitting the bacon and added red pepper flakes and some cayenne pepper to spice it up. I put them out about 10. They were gone so fast. I will add more potato chips next time I make them because I wanted a little more potato taste (thus 4 stars). For fast, easy, unique and tasty this recipe rocks.
