  • Mix flour, baking powder and salt in large bowl. Mix cereal and milk in medium bowl; let stand 3 minutes. Stir in egg, applesauce, sugar, margarine and orange peel. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
  • Spoon batter into muffin pan which has been sprayed with cooking spray, filling each cup 2/3 full.
  • Bake at 400°F for 20 minutes or until golden brown. Serve warm.

Substitute

Substitute 2 cups banana nut whole grain cereal flakes for whole grain cereal flakes with cranberries and almonds.

    The first time I made these I added a Tbsp of lemon juice and they were good. The second time I added a half cup of orange flavored craisins and everyone really loved them! This recipe is a keeper!

    I used egg beater instead of egg and I also used lemon juice to give it some zip. If using more than a Tbls. then subtract a spoonful of milk .
