what you need

1-1/4
cups  flour
1
Tbsp.  CALUMET Baking Powder
1/4
tsp.  salt
2
cups  whole grain cereal flakes with cranberries and almonds
1
cup  fat-free milk
1
 egg, slightly beaten
1/2
cup  applesauce
1/3
cup  firmly packed brown sugar
2
Tbsp.  margarine, melted
1
tsp.  grated orange zest

Make It

MIX flour, baking powder and salt in large bowl. Mix cereal and milk in medium bowl; let stand 3 minutes. Stir in egg, applesauce, sugar, margarine and orange peel. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)

SPOON batter into muffin pan which has been sprayed with cooking spray, filling each cup 2/3 full.

BAKE at 400°F for 20 minutes or until golden brown. Serve warm.

Substitute
Substitute 2 cups banana nut whole grain cereal flakes for whole grain cereal flakes with cranberries and almonds.
