I can remember my Mom always making this salad when growing up, but I doubt her version was low fat. This was delicious just like I remembered, only better because there was no nuts in it and I could not tell it was lower in fat. I love the pineapple taste so next time I'm going to increase it from 8 oz to 15 oz.
