  • Heat oven to 350ºF.
  • Drain pineapple, reserving 1 cup juice. Prepare cake batter as directed on package, substituting reserved juice for 1 cup of the water. Pour into 15x10x1-inch pan sprayed with cooking spray.
  • Bake 15 to 18 min. or until toothpick inserted in center comes out clean. Cool completely.
  • Beat pudding mix and milk with whisk 2 min. Stir in pineapple; spread over cake. Cover with COOL WHIP; top with coconut and nuts. Keep refrigerated.

I made this in a 9x13 pan (didn't have what the recipe called for) and the cake mix I used only called for a 1/3 cup of water, so I only used 1/3 cup of pineapple juice instead of the full one cup. So, the cake didn't have much of a pine apple flavor, which might have been where I went wrong. Any suggestions will be appreciated for future attempts to make this cake. :)All in all it was just ok, but not as good as I was expecting.

Suggestion to those who are going to make this for the first time, cook cake in the 9x13 pan but have another bigger dish to put the cake in after it's baked. I found that the cake filled up the entire height of the 9x13 pan so to pour the pudding/pineapple mix and then top with the cool whip would have overflowed the 9x13 pan. Luckily, that didn't happen but only because I transferred the cake to a bigger pan/container.

I never expected it to be as good as it was, I was a little concerned about the lemon pudding mix along with the pineapple, but it worked wonderfully together. I had a pineapple cake mix and used that. The smell was heavenly, like you were in the tropics. This will be a great cake to make during a snow storm this winter. At least the house will smell like the tropics. Thanks Millie for the great recipe.

I did change a couple of things and used applesauce in place of oil in cake and I baked the cake in a 13 x 9 pan for about 33 min -I wonder what other flavors of pudding would be good or cakes and I will be making it again - very moist and the house smelled so good!

Made this cake for a Superbowl/Birthday party this past Sunday and it was an absolute winner !!! I added Watkins Rum flavoring to the crushed pineapples and it took this cake to a whole new level. My guests and family were asking for thirds. Love it. Can't wait to make this again this weekend. :)

Rated 4 out of 5 by from Very good dessert! Very good dessert! However I made a slight adjustment to keep the cake from being soggy. I mixed the pineapples in with the pudding and then folded the cool-whip into that mixture. Very generously layered that on top of the cake along with the nuts and coconut. Yummy!

Instead of the lemon pudding I used coconut cream pudding and I put a whole can of crushed pineapple in the cake mix in-place of the water. Also used candied pecans on top....Yummy!!!

I was hesitant since I don't really like crushed pineapple, but I wanted to make something special for my dad's birthday. It came out so fluffy and moist, the topping wasn't overpowering which I thought it would be. I didn't add the pecans or coconut, it was delicious.
