Ripe tomatoes should be firm and free of any soft spots, bruises or signs of mold. They should have bright shiny skins, feel heavy for their size and boast a lovely fresh tomato fragrance.

We really enjoyed this dish. I liked adding the tomatoes. It was a welcome change from traditional mac and cheese. I did add a little bit of dried basil along with the salt and pepper. I'll definitely make this dish again.
We felt it had no flavor. I didn't even keep the leftovers. It was to bland for our tastes.
This is the recipe I've been looking for. Has all the ingredients I have on hand and reminds me of a baked macaroni I enjoyed so much as a child. I will make this recipe for dinner tonight.
