  • Mix flour, baking powder and salt. Beat sugars and orange zest in large bowl with mixer until blended. Add eggs, 1 at a time, mixing well after each addition; beat until thick and lemon colored. Stir in vanilla. Add flour mixture gradually, beating after each addition until blended.
  • Stir 1 cup flour mixture into 1/2 cup melted butter until blended. Gently stir back into remaining flour mixture in bowl. Stir in orange juice. (Batter should be smooth and shiny.) Press a piece of plastic wrap against surface of batter; refrigerate 1 hour. Meanwhile, generously brush large madeleine pan with 2 Tbsp. softened butter. Dust with flour; remove excess flour. Refrigerate 10 min. or until butter is firm. Spoon heaping tablespoonfuls of batter into center of each madeleine mold; refrigerate 1 hour.
  • Heat oven to 375°F. Bake 9 to 12 min. or until edges are golden brown and centers spring back when lightly touched. Remove from oven. Immediately release madeleines from pan by tapping pan on counter. Cool on wire rack.

If any madeleines stick, use a small spatula, butter knife or fingers to help release.
