  • Bring broccoli and broth to boil in medium saucepan. Stir in rice; cover. Remove from heat. Let stand 5 min. Stir in VELVEETA. Let stand, covered, 5 min. Stir until VELVEETA is completely melted. Spoon into microwaveable bowl. Refrigerate up to 24 hours.
  • Meanwhile, melt butter in small skillet on medium heat. Add cracker crumbs; cook 2 to 3 min. or until golden brown, stirring frequently. Cool completely. Stir in Parmesan. Spoon into airtight container. Store at room temperature up to 24 hours.
  • Cover broccoli mixture with waxed paper just before serving. Microwave on HIGH 5 to 6 min. or until heated through; stir. Sprinkle with crumb mixture. Microwave, uncovered, 2 to 3 min. or until heated through.

Substitute

Prepare using 2% Milk VELVEETA.

Rated 5 out of 5 by from I used more Velveeta than called for (because we LOVE cheesy dishes). I used more Velveeta than called for (because we LOVE cheesy dishes). I melted the cheese with some milk in a separate pot and added some Good Seasons Italian Seasoning to the cheese as it melted. I also added some of the Good Seasons Italian Seasoning to the Ritz crumbs before I browned it in the skillet. It gave it some extra flavor and the dish was DELICIOUS. My 3 children, ages 4-10, my husband, and I all loved it.

It was excellent in every way and I'm so disappointed in reading some of the other reviews. Not sure what went right for me or wrong for them but, it is a dish I'll be making again and again! I actually made it the night before and it made preparing the rest of the dinner so much easier the day of. Two thumbs up!!!

I cheated though and didn't make it ahead, instead i just put it in the oven just long enough for the crackers to brown on top after i cooked it all on the stove. I thought it was much better than the old cheese wiz way my mom taught me, and the velveeta tasted much much better!!!

Rated 4 out of 5 by from I went with previous ratings and added half a can of Cream of Chicken w/herbs soup. I went with previous ratings and added half a can of Cream of Chicken w/herbs soup. Then, I added a package of already cooked grilled chicken. Instead of refrigerating we put it in the oven at 325 for about 10 minutes. We then added the toasted cracker crumbs on top and baked for an addt'l 5 minutes. It tasted great this way.

Rated 2 out of 5 by from It was extremely dry. It was extremely dry. I even added extra cheese when I heated it up. It was pastey and bland. The recipe stated you could make it ahead and it would be good. I think if you make it and eat right away it would be better, also if you add a can of cream of chicken soup to "wet" the mixture.

Other than that I didnt change anything.I ate leftovers the next day and added a little more milk and some shredded cheese and it tasted perfect!

We usually have about 8 people over and I double the recipe so everyone can get enough. Leftovers taste great. Plus it's nice to make this the day before Thanksgiving so you have one less thing to cook Thanksgiving day.

I didn't make it ahead of time, just put the pan in the microwave for a few minutes when I was done with the other steps. I used low-fat chicken broth and it was good; I also used Minute brown rice.
