  • Whisk eggs and milk in large bowl until blended. Add all remaining ingredients except bacon; mix lightly. Shape into 6 (1-inch-thick) patties; wrap bacon slice around edge of each patty.
  • Wrap individually in plastic wrap; place in freezer-weight resealable plastic bag. Seal bag. Freeze up to 3 months.
  • Heat oven to 375ºF. Unwrap frozen patties; place on rimmed baking sheet sprayed with cooking spray. Bake 40 to 45 min. or until done (160ºF).

Variation

Frozen meatloaves can be thawed overnight in refrigerator before baking. When ready to serve, heat oven to 375ºF. Place meatloaves on rimmed baking sheet sprayed with cooking spray. Bake 35 min. or until done (160ºF).

Rated 5 out of 5 by from These turned out great! These turned out great! The BBQ sauce is the key, I may add a little more next time. These smelled phenomenal while they were baking, primarily due to the BBQ sauce and bacon. The family absolutely loved them. I cooked mine in a 13 x 9 baking dish, and I placed them against the side of the dish to keep the bacon strip from unwrapping (worked perfectly). I served them with homemade mashed potatoes and steamed broccoli. Whatever you do, do not sub out the BBQ sauce for ketchup, don't do it! Follow the recipe as it is written!

We found 6 patties to be very large and had difficulty keeping the bacon wrapped around them. Next time I'll divide into 8 patties, pre-cook the bacon in the microwave slightly, and secure with a toothpick. Hopefully that will help it crisp up a little better in the oven as it was a bit soggy for our tastes. Also, I used ketchup instead of BBQ sauce as a matter of preference, and mozzarella instead of Mexican blend because it's what I had on hand. But the whole family loved this dish and declared it a definite keeper!

I doubled the recipe and added a bit more than double the amount of cheese, used thick sliced bacon from the deli and added 1/2 tsp of black pepper and 2 cloves of garlic finely grated, I froze 4 patties for future use and cooked 4 so that we could have left overs the next day. I have to say that the house smelled wonderful while they were cooking. I served them with home made mac and cheese, collard greens and roasted beets.

I was going to give this recipe 5 stars, except for the fact that I think the stuffing mix made this a tad on the salty side. Maybe next time I will use less mix and sub some bread crumbs instead. Oh, and I had to bake mine longer. From frozen to done was about an hour. But I loved the overall flavor, and I think the BBQ sauce was a big part of it! I'm going to brush a little sauce on the top of mine next time, too.

It is easy to make and I may use 2 full pounds of meat next time it had a bit much stufing in it. How ever I see it as a awsome option for make a head meals and meals for where there is only one person or two. where you want a full meal but do not want a lot of left overs sitting around.You have got to try this!

Rated 3 out of 5 by from This was an ok recipe. This was an ok recipe. I used the low-sodium version of StoveTop Stuffing. In addition, I only used about 3/4 of the package instead of the whole package (which was what the recipe called for). I'm glad I did bc my husband thought it was too much stuffing and I didn't even use the full amount. I will make it again but will play around with the ingredients more to find the right blend for my family's tastes.

Liked it very much and will try this one but will probably use ground chicken instead of red meat plus for the one that thought the stuffing made it a tad salty...they have low sodium stove top but I had to have it special ordered into my store. If more of us request it maybe stores will start to carry it.

Have shared it with so many. Can't stop raving about this simple dish that literally stretches only 1 lb. ground beet into 7 mini meatloaves! Perfect for vacuum seal and freeze for easy, easy weeknight comfort food!
