  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet; drain bacon on paper towels.
  • Add onions, peppers and garlic to reserved drippings; cook and stir 5 min. or until crisp-tender. Stir in tomato sauce and salsa; simmer 2 min., stirring occasionally. Stir in shrimp and corn; simmer 2 min. Stir in bacon.
  • Spoon rice into 13x9-inch baking dish sprayed with cooking spray; top with shrimp mixture and cheese. Cover with foil. Refrigerate up to 24 hours.
  • Heat oven to 375ºF. Bake casserole, covered, 35 min. or until heated through, uncovering after 20 min.

I made this after a day of Christmas shopping and it was quick and easy! I bought shrimp that were already cleaned, steamed, and spiced to make it even quicker. I omitted the garlic and used only half the onion. I also used a box of tomato sauce instead of can and I used the whole jar of salsa. I also added fresh tomatoes and mushrooms and used the brown rice. The recipe makes enough for plenty of leftovers.

So using left over rice, ingredients on hand, a few items from the grocery store and voila! Like magic, smiles and praise for a great dish streamed in...yes! Mama loves to add keepers to my recipe log. Nice to add as a simple Aloha for my ohana.

He thought it was relatively easy, followed the instructions fairly closely and it turned out terrific. He used a mild flavored salsa but I think the next time we'll use a salsa with medium heat.
