  • Whisk eggs and milk in large bowl until well blended. Stir in bread. Add spinach, bacon and 1-1/2 cups cheese; mix lightly.
  • Pour into 13x9-inch baking dish sprayed with cooking spray; top with remaining cheese. Cover; refrigerate overnight.
  • Heat oven to 350ºF. Bake, uncovered, 48 to 50 min. or until top is puffed and golden brown.

Rated 5 out of 5 by from This is an awesome recipe! This is an awesome recipe! A big hit with everyone who has tried it. I used fresh spinach to reduce the amount of water. I plan on adding mushrooms to the next one I fix. I also used a smaller dish than 9X13" so it was a little thicker. It is easy to do and smells awesome as it is baking. The dish actually tastes even better the next day. A definite keeper.

It was pretty good, but I think I will use fresh spinach next time as the frozen spinach just had too much water and made the whole thing a little runny. I will also add mushrooms and onion. I used veggie bacon and it worked well (vegetarian). The milk may also need to be reduced to help with firming it up more.

I put it together the night before so it was ready and baked while we opened presents Christmas morning. It was easy to make and tasted delicious. The leftovers were even better. I forgot to put the extra cheese on top and it still tasted very good.

I made the recipe just as it's written but just made sure I wrung the spinach out really well. It turned out perfectly and I will definitely make it again!

Everyone enjoyed it...even the small kids. I was concerned because it didn't call for any salt but it was perfect since the bacon and the cheese have plenty of salt.

I have made this with bacon & spinach as originally listed and with cubed ham & frozen chopped broccoli. Both were excellent. You can mix and match and make it any way you want. It is my 5 year old's current favorite recipe!

I used Turkey bacon in the recipe it was wonderful. The whole family enjoyed it. It is a very hearty dish. Might try sausage in it next time.
