This low-fat layered salad has a lot going for it. The cheese provides a good source of calcium; the vegetables contain vitamin A and team up with the black beans to provide fiber; and each serving contributes more than 1/2 cup of the recommended 2-1/2 cups vegetables per day.

Unfortunately, I made 2 batches of this and totally forgot to set it out for my party. However, I found that if you don't eat it promptly, it gets very runny and soggy. I probably won't make it again. :(

This was a very tasty salad but definitely not meant for leftovers. I had half the salad leftover the next day and had to through it out because the lettuce was swimming in its own liquid.
