Mallow-Topped Sweet Potatoes

What You Need

1/4

cup butter or margarine, melted

1/4

cup orange juice

1/2

tsp. ground cinnamon

cans (15 oz. each) sweet potatoes, drained

JET-PUFFED Marshmallows (about 2 cups)

Make It

HEAT oven to 350°F.

MIX butter, orange juice and cinnamon in 1-qt. baking dish sprayed with cooking spray until well blended.

ADD sweet potatoes; mix lightly. Top with marshmallows.

BAKE 15 to 20 min. or until sweet potatoes are heated through and marshmallows are lightly browned.

This sweet side dish is a holiday favorite. Pair it with a mixed green salad and cooked lean meat, poultry or fish for a balanced meal.

Substitute

Substitute 2 cups JET-PUFFED Miniature Marshmallows for the 15 JET-PUFFED Marshmallows.

Use Your Microwave

Mix sweet potatoes with butter mixture as directed. Place in 1-qt. microwaveable dish. Microwave on HIGH 8 to 10 min. or until sweet potatoes are heated through, stirring after 4 min. Top with marshmallows; let stand 2 to 3 min. or until marshmallows begin to melt.

Has anyone ever tried this? Instead of just topping the sweet potatoes with marsmallows... I have tried melting the mallows in a saucepan, adding some butter.. it gets thick and you just drizzle the mallow sauce over the top. It's MUCH better. Was a crowd pleaser!!

great recipe. very easy. added two heaping Tbsps of brown sugar. it made the sauce awesome and gooey!

I also add brown sugar, I cook everything in a sauce pan and pour over sweet potatoes in the baking dish then top with mini marshmellows. I also use fresh sweet potatoes.

This would be much better with fresh potatoes. The canned ones really weren't very good.

My family loved this recipe, I thought it was just ok. Next time I will mash the sweet potatoes or use fresh ones.

I have been making this dish for about 4 years. I am not a lover of sweet potatoes but can not get enough of this. I actually found a way to get my children to eat them without complaints. Thank you for this wonderful recipe.
