  • Heat oven to 375°F.
  • Bring water to boil in medium saucepan. Remove from heat; stir in mangos. Let stand 10 min. or until mangos are softened. Drain mangos, reserving 1/4 cup of the water.
  • Combine flour, baking powder, salt and ginger in large bowl.
  • Beat egg with whisk in medium bowl until blended. Add brown sugar, butter, sour cream, mangos and reserved water; mix well. Add to flour mixture along with the nuts; stir just until moistened. (Batter will be lumpy.)
  • Spoon batter into 12 paper-lined muffin cups. Combine granulated sugar and cinnamon; sprinkle over batter.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool muffins in pan 5 min. Remove to wire rack; cool completely.

Special Extra

Stir 1 tsp. lime or lemon zest into batter before spooning into prepared muffin pan cups.
