  • Mix spices; sprinkle over both sides of each breast.
  • Heat oil in large skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Meanwhile, cook couscous as directed on package, omitting salt and oil. Combine remaining ingredients.
  • Spoon couscous onto platter; top with chicken. Cover to keep warm. Add mango mixture to skillet; cook 1 min. or until heated through, stirring occasionally. Spoon over chicken.

Serving Suggestion

Serve with steamed fresh green beans.

Substitute

If fresh mangos are not available, prepare using 1-1/2 cups (about 2/3 of 16-oz. pkg.) thawed frozen chopped mangos. Look for them in the frozen fruit or juice section of your supermarket.

Instead of using the recommended 1tsp of ginger and 1tsp of cinnamon, I just sprinkled on a little Lawry’s, then cinnamon, then the ginger, then a touch of garlic powder. Thought cinnamon and ginger alone would make the chicken too bland. Also, I baked the chicken on 350 for 45-50 mins. Nice change in pace!

I personally really enjoyed this dish although I had no idea couscous could be so messy! The family enjoyed it except one who just refused to accept eating fruit on top of chicken, but turned out very yummy and was a nice change of pace from the standards I often make like spaghetti, tacos, etc...

Rated 5 out of 5 by from We LOVE it. We LOVE it. I would suggest baking the chicken or finding a marinade since it seems to come out dry in the pan. The cinnamon and ginger are great. Thanks to the awesome salsa, my favorite salad dressing is now Asian Toasted Sesame. Would suggest using a flavored couscous though.

Rated 2 out of 5 by from Too many conflicting favors. Too many conflicting favors. I would try again without the cilantro. The cilantro just over powered the meal and we couldn't enjoy it. Kids were more tolerable of the cilantro than my husband and I, but they did not want to finish it.

Rated 4 out of 5 by from This was good and different. This was good and different. It was a little too sweet, but I added red chile flakes to help contrast the sweetness. Easy to make and I think the "salsa" is easy to adjust to personal preferences.
