  • Add sweet potatoes; stir to coat. Cook 10 min., stirring occasionally. Remove from heat. Beat with mixer until smooth.

Special Extra

Add 1 tsp. orange zest with the sweet potatoes.

I wouldn't say it was bland, but at the same time, it seemed to be missing something. If I make it again, i will "doctor" it up, with cinnamon, maybe sugar.

Rated 4 out of 5 by from I changed this a little. I changed this a little. I used fresh sweet potatoes and boiled them. I did use the butter and syrup but as I was whipping them I added some brown sugar and cinnamon. They were so smooth and yummy. My kids (6 and 2) absolutely loved them.

However, I substituted 1/4 cup chopped Praline pecans for the marshmallows sprinkled on top of the squash the lst 5 minutes of baking. Everyone loved the nutty flavor added to the squash flavor.

Instead of canned sweet potatoes, I cut up raw sweet potatoes and "basted" them with the syrup/butter mixture in the oven. Never sure how sweet the raw potatoes will be, so this was a great way to fix them.
