  • Heat oven to 350°F.
  • Line 13x9-inch pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides; spray with cooking spray. Mix cake mix, 1 egg and butter until blended; press onto bottom of prepared pan.
  • Beat cream cheese, pumpkin, sugar, dry pudding mix and remaining eggs with mixer until blended; pour over crust.
  • Bake 40 min. or until center is almost set; cool 10 min. Use foil handles to transfer dessert to wire rack; cool completely.
  • Meanwhile, beat whipped topping mix, milk and syrup in large bowl with mixer on low speed until blended. Beat on high speed 4 min. or until mixture forms stiff peaks. Refrigerate until ready to use.
  • Spread whipped topping mixture onto dessert; sprinkle with cinnamon.

I am not a pumpkin pie fan so this was a nice alternative with a taste of pumpkin pie but definitely not "just like one" as stated in one of the reviews I read. I as well could not find the right pudding but used vanilla instead with a bit of pumpkin pie spice. I did not find this to cook slow as some others said but did keep it in the oven about 48 minutes just in case- although I am not sure if that was really necessary. I also took the advice of another reviewer by doubling the amount of whipped topping which was a good thing because otherwise it would definitely be a very thin layer. The entire dessert seemed firm enough to me to serve as a bar if desired although we ate ours with a fork.

I had to substitute cream cheese pudding for the pumpkin spice Jello pudding mix, which I couldn't find anywhere. I added a little pumpkin pie spice to the filling and it tasted fine. I think the bars would have been easier to manage if you didn't put foil on the bottom and pull out to cool (next time I would leave them in the pan). The bars are a little tender, so they crumbled a bit taking them out. Overall, everyone enjoyed them and the flavor is great.

You can only find the Pumpkin Spice Jell-O around the first or middle of October and there is only a limited number of boxes for sell. I was not able to find any last year but found some this year and purchase all they had because I like to use it for different desserts. I'm going to make this for the company Thanksgiving lunch and know it's going to be good. I'll keep an eye on the cooking time.

This is quite good although it can't really be called a "bar" as it is too soft to picked up and eaten with your fingers; fork required. That said, I used the vanilla pudding with added pumpkin spice and plain ready-made CoolWhip topping. I sprinkled the top lightly with cinnamon/sugar mixture and drizzled a tiny bit of maple syrup over the top when serving. Loved by all.

Rated 5 out of 5 by from Everybody loved this cake/pie. Everybody loved this cake/pie. It is April, so I could not find the pumpkin pudding so I used butterscotch pudding instead. Everything else was per the recipe. Love it!!!! but when I was cutting it and serving, I scraped up the aluminum foil. I hope no one got a piece of foil.

I bought a few in case I loved it and because Ralphs nor Albertson carries this flavor. I am glad I did because this dessert is easy and delicious. It is a soft bar. This dessert would be an awesome potluck hit!

I could not find pumpkin spice jello pudding anywhere so I used vanilla pudding mix with a teaspoon of pumpkin spice spice , and the baking time was not 40 minutes it took 1 hour and 5 minute, 40 minutes it was still runny :( but over all it was a hit at my Halloween party.

I could not find the Pumpkin Spice pudding either, after checking Sendiks and Woodmans. However, I used Philly Pumpkin Spice cream cheese (limited edition), added some more pumpkin pie spice and substituted French vanilla pudding. Also, had to bake longer than 40 minutes.
