What You Need

pkg.  (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
1/4
cup  fat-free milk
1
pkg.  (1.0 oz.) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding
1
can  (8 oz.) crushed pineapple in juice, undrained
1
tub  (8 oz.) COOL WHIP LITE Whipped Topping, thawed, divided
1/2
cup  BAKER'S ANGEL FLAKE Coconut, toasted, divided
1
 ready-to-use reduced-fat graham cracker crumb crust (6 oz.)

Make It

BEAT Neufchatel and milk in large bowl with mixer until blended. Add dry pudding mix and pineapple; beat 2 min. Gently stir in 2 cups COOL WHIP and 1/4 cup coconut.

POUR into crust.

REFRIGERATE 3 hours or until firm. Top with remaining COOL WHIP and coconut just before serving.

Toasting coconut is easy. Just spread BAKER'S ANGEL FLAKE Coconut evenly in shallow baking pan. Bake at 350°F for 8 to 10 min. or until lightly browned, stirring occasionally. Watch carefully as coconut can easily burn!
