I must have done someting wrong because it was underwhemling. I really thought the combination of pesto and red onion would bring it to life, but sadly we ended up throwing 2/3 of it out.

Made this last night, and my husband loved it. I used a light balsamic vinaigrette dressing instead, and it was delicious. Will definitely make again, especially this summer when zucchini is in abundance.

Although easy to make, both my wife and I thought this was rather bland and unexciting. Other salads we've made were much more interesting.

I used 1 zucchini and 1 yellow squash with Vidalia onion I did add a lot more parsley than it called for, probably a 1/2 cup and a big ole heaping soup spoon of home made pesto. Delicious.

Quick, easy and delicious! We cut red onion to 1/2 cup and added 2 diced green onion. Great cool, summer side dish.
