For added color, prepare using 1 yellow summer squash and 1 zucchini.

To give it a little Oomph, I put a tablespoon of prepared chili garlic sauce in instead of the pesto. Wakeup flavor!
I have made this several times now and it is AWESOME, Love it the flavor is even better the day after!!!
I must have done someting wrong because it was underwhemling. I really thought the combination of pesto and red onion would bring it to life, but sadly we ended up throwing 2/3 of it out.
