  • Cook cauliflower in boiling water in large saucepan 15 min. or until very tender; drain. Return to saucepan.
  • Add dressing; mash until cauliflower is light and fluffy.
  • Top with onions.

Cooking Know-How

For a smoother potato-like texture, process cooked cauliflower and dressing together in food processor, or in saucepan with immersion blender, until very smooth.

To Halve

This recipe can easily be halved. Just prepare as directed, cutting all ingredients in half. Makes 4 servings.

Note

Refrigerate any leftovers. Reheat in microwaveable container just before serving.

Served this instead of mashed potatoes when I had my family over for dinner one Sunday. When I told my family what it was they all made a face but after tasting this dish, they couldn't stop raving about it. Now my three daughters make it once a week and my grandchildren who do not like veggies gobble it all down. Thank you so much for this delicious recipe...I also make it once a week

Instead of the dressing, they like it with just butter, a little shredded cheese and pepper. I serve this about once a week always trying different variations I can think up. Add chunks of chicken breast after mashing for a quick and easy dinner that eveyone will like.

I steamed them for about twice as long as I normally do, and the recipe was wonderful. My husband loved them, and my teenage son asked me to make another batch the following nite. Thank you!
