  • Peel potatoes; cut into 1-inch cubes. Place in medium saucepan. Add enough water to completely cover potatoes. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 10 to 15 min. or until tender. Drain.
  • Return potatoes to the pan; mash to desired consistency with hand masher or electric mixer.
  • Add mix-ins and flavorings. Cook until heated through, stirring frequently.

Prepare this tasty side dish up to 2 days in advance and store, covered, in the refrigerator until ready to serve. To reheat, place the potato mixture in a microwaveable bowl; cover with vented microwave-safe plastic wrap. Microwave on HIGH about 4 min. or until heated through, stirring after 2 min. Stir in a few spoonfuls of milk for extra creaminess, if desired.

    We made this with the sour cream, cream cheese, Velveeta, grated cheese, bacon bits and chives. It was AMAZING! A huge hit! The husband went back for seconds and asked me to make it again tonight. Quick & easy! Loved it!!

    Amazing! My brother doesn't like potatoes but even he ate these. I added a little garlic to it. Taste is awesome!!
