  • Cook and stir onion and bacon in large skillet on medium heat until bacon is crisp and onion is tender. Drain, reserving 1 Tbsp. of the drippings in skillet.
  • Prepare Mashed Potatoes according to package directions. Add onion mixture, flour and egg; mix well.
  • Heat reserved bacon drippings in skillet. For each pancake, spoon 1/4 cup of the potato mixture into skillet; smooth with back of spoon to create a 3-inch patty. Cook 2 minutes on each side or until crisp and golden brown on both sides.

Cooking Know-How

To prevent sticking, spray back of spoon with cooking spray before using to smooth the potato mixture in skillet.

    I cant help but laugh at the last review.Mashed potato pancakes are supposed to taste like fried mashed potatoes since that is exactly what they are. I have been looking for a recipe for this for a while.My mom used to make them and havent had in years.I added more seasonings but they are just like I remember.

    It tastes really bad and flavorless. The texture was also weird in my mouth. Definitely not worth making again. Will eat mashed potatoes the old fashion way. :)
