  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Crush strawberries thoroughly, one layer at a time. Measure exactly 3-1/4 cups prepared fruit into large bowl. Add lemon juice; mix well.
  • Stir pectin into prepared fruit in bowl. Let stand 30 min., stirring every 5 min. Gradually add sugar, stirring after each addition until well blended. Stir additional 3 min. or until most of the sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. If frozen, thaw in refrigerator before using.

How to Measure Precisely

To get exact level cup measures of sugar, spoon sugar into dry metal or plastic measuring cups, then level by scraping excess sugar from top of cup with straight-edged knife.

I've tried the "lower sugar" ones & don't think they taste good. I know it says "don't reduce the sugar" in big letters, but we've been doing it for a long time & it's FAR tastier that way.

I also have been making this recipe for years...my kids won't eat store-bought jelly/jam now. My modification: I use frozen strawberries whenever fresh ones aren't available. I've never had a problem (but a soft set jam would make a great syrup).

I love this recipe because it is so easy to make and i didn't have the mess i would normally have with useing a pan or even haveing to clean jars, lids, or the heat in the kitchen, it's wonderful, I added a drop of mint with this, it was great.

Rated 4 out of 5 by from I love this jam. I love this jam. It tastes like you are biting into a fresh strawberry. I think it's way too sweet. That's the only complaint I have. I may try your suggestion and add more fruit and less sugar.
