Delicious, I added an extra chipotle to make it a bit spicier and it was just perfect...even my 10 yr old loved it!

What You Need

1
can   (14-1/2 oz.) diced tomatoes, undrained
1
can  water
1/4
cup  KRAFT Zesty Italian Dressing
1
 chipotle pepper in adobo sauce
1
pkg.  (6 oz.) STOVE TOP Stuffing Mix for Chicken
2
 eggs
1/2
cup  water
2
lb.  lean ground beef
1/4
cup   chopped fresh cilantro
4
cups  hot cooked rice

Make It

BLEND first 4 ingredients in blender until smooth. Pour into large saucepan. Bring to boil.

MEANWHILE, mix next 5 ingredients in large bowl. Shape into 24 balls, about 1/4 cup each. Drop meatballs gently into boiling tomato sauce; cover.

SIMMER on medium-high heat 20 to 25 min. or until meatballs are done (165°F). Serve with rice.

Purchasing Ground Beef
When purchasing ground beef, always check the label to ensure that the meat has been ground on the day of purchase. If you can't use the meat immediately, wrap it tightly and freeze until ready to use. For best quality, use within 2 months.
Shortcut
Use a small ice cream scoop with a release mechanism to easily shape meat mixture into balls. The scoops lets you shape the meatballs without using your hands so there's less chance of spreading bacteria from the raw meat around your kitchen.
