Instead of the canned tomato I layered slices of Zucchini and fresh tomato and added fresh oregano, then squeezed fresh lemon juice over it. I didn't have cod so I used pollock. Since it is a thinner fish, I cooked the tomato and zucchini for about 15 minutes first, then added the fish and topped it with the dressing. I am lactose intolerant so I also eliminated the cheese. All that being said, it was really good!
