  • Preheat oven to 400°F. Cut opened package of fish into 4 equal pieces.
  • Mix zucchini and tomatoes in 9-inch square baking dish; top with fish. Spoon 1 Tbsp. of the dressing over each piece of fish.
  • Bake 15 minutes; sprinkle with cheese. Bake an additional 8 to 12 minutes or until fish flakes easily with fork. Serve with lemon wedges.

Substitute

Substitute any mild-flavored white fish, such as haddock, sole, whitefish or halibut, for the cod.

    Instead of the canned tomato I layered slices of Zucchini and fresh tomato and added fresh oregano, then squeezed fresh lemon juice over it. I didn't have cod so I used pollock. Since it is a thinner fish, I cooked the tomato and zucchini for about 15 minutes first, then added the fish and topped it with the dressing. I am lactose intolerant so I also eliminated the cheese. All that being said, it was really good!

    I seasoned the fish with lemon pepper and salt before baking. I also served this with linguine mixed with a little butter and garlic. It made a great meal.
