Since I am not a fan of olives, I used roasted red peppers and fresh red peppers in their place. I also used halibut. In addition, I used 3 Tbsp. of dressing. The grocery did not have the lemon,garlic & oregano feta, so I bought the ATHENOS traditional and added fresh lemon (to taste), italian spices, and 2 pinches of crushed rosemary--Delicious! I sauteed the fresh red peppers in olive oil with a clove of garlic. Just before adding the feta, I placed a roasted red pepper around the fish, then topped with the feta. I served it with a box portabella mushroom risotto, but added my own sauteed garlic & organic portabellas. I didn't need the lemon wedges on the side because of the cheese. This was a fabulous dinner!
