Add 1 can (5 oz.) solid white tuna, drained and separated into large chunks, to salad.
Salad can be made ahead of time. Prepare as directed, but do not add cheese. Refrigerate up to 8 hours. Toss with cheese just before serving.
This flavorful salad is a good source of fiber from the beans which team up with the artichokes to provide iron.

This was excellent! I followed the recipe exactly and it was very easy and "a real keeper". I'll have to be careful not to make it too often. It was great with grilled chicken and I think it would be equally good with fish.
Love this recipe! I didn't change anything. Even the amount of dressing was right and I usually have to add more for my taste. I used canned artichokes that were already quartered...a time saver. Yummy!
Great Salad, very filling. Made it for a healthy lunch at work with several of my co-workers and everyone loved it!
