  • Mix first 6 ingredients.
  • Dip chicken in yogurt, then in cheese mixture, turning to evenly coat both sides of each breast.
  • Cook in skillet sprayed with cooking spray on medium heat 5 to 7 min. on each side or until done (165ºF). Serve over couscous.

Substitute

Prepare using DI GIORNO Grated Parmesan Cheese.

Special Extra

Add 1/4 cup minced bell peppers to the couscous and top the chicken with 1/4 cup chopped fresh parsley.

I'm trying to quit cooking oily foods and quit with the fast foods and restaurant take outs so im giving this whole thing a try. i've made a few things from this site and wow they are delicious!! i tried this recipe, but instead of chicken breasts i used chicken thighs and i used the parmasean cheese and did everything else the same except at the end when i put it in my casserole dish i put a little italian dressing over all the chicken thighs, not too marinate the whole thing, just a dap of it onto each one to give it more flavor and i put it in the oven. EXCELLENT!!! i will definitely do this again.

Rated 5 out of 5 by from Of course, I had to modify this recipe, and it was wonderful. Of course, I had to modify this recipe, and it was wonderful. I skipped the oil and bread crumbs. I just put the spices (but no salt) in with the cheese, rinsed my chicken on water, shook off the water and dredged in the cheese and baked. I was hoping for less calories and sodium. It was wonderful. My husband commented on the taste of salt, but it was cheese. Everyone loved it and it's fast!

Rated 5 out of 5 by from my family loved this recipe! my family loved this recipe! i also made a topping for each chicken breast with minced garlic, diced onion, sliced fresh mushrooms, canned tomatoes and olive oil. i sauteed the 1st 3 ingredients in 2 T. olive oil and then added some drained petite diced tomatoes and topped each breast with this and served it with a side salad.

Instead of oil to make the bread/cheese mixture stick, I used sour cream to coat the chicken and then coat it with the bread crumbs/cheese mixture. I also baked it at 400 degrees for 20 minutes instead of doing it stove top. I will use this as a regular meal during the week.

The only thing I noticed is that the thicker parts of the chicken breast were slow to cook. I popped them in the oven with the rolls to finish them off while I finished setting the table.

Rated 5 out of 5 by from Outstanding flavor. Outstanding flavor. My husband generally does not like boneless chicken breasts because they tend to dry out. These were moist and flavorful. He said they were the best chicken breasts he had ever had! I will definitely make this many more times.

I had problems w/ the breading getting torn off. I finally used a spatula instead of tongs. Use plenty of oil/non-stick spray to keep the coating nice!
