  • Pierce sausage with fork. Cook in large skillet on medium-high heat 15 to 20 min. or until browned. Remove from skillet. Cut into pieces; set aside.
  • Add 1/4 cup of the dressing and chicken to skillet; cook 10 min. or until chicken is browned on both sides. Stir in sausage, mushrooms, broth and remaining 1/4 cup dressing.
  • Dissolve cornstarch in water; add to skillet. Bring to boil. Reduce heat to low; cover. Simmer 15 min. or until chicken is cooked through. Serve over rice.

Special Extra

Add a sprinkling of chopped fresh parsley to jazz this up a bit.

Make it Easy

Substitute 3 lb. chicken pieces for roasting chicken.

Prepare as directed, using 1-1/2 lb. chicken parts, cut up, and halving all the other ingredients.

Rated 4 out of 5 by from This was a very tasty and satisfying dish! This was a very tasty and satisfying dish! My two young boys even ate it without a fight! It did thicken up pretty well for me. Not sure if this made a difference or not but I used warm water and dissolved the cornstarch and made sure it came to a boil to get the most out of the cornstarch. I would definately make this recipe again!

Rated 5 out of 5 by from This was excellent. This was excellent. I made it low carb. Instead of Greek Vinaigrette Dressing I use 0 carb olive oil Vinaigrette Dressing. And I did't use rice, I steamed some baby spinish sauted with minced garlic, parsley and basil and ate it with that. It was fabulous. The sauce from the chicken gave the spinish a good taste.

It was runny but still delicious. He had rice with his (brown) and I had mine over steamed spinach like one of the other reviews suggested. Cant wait to make it again.

Instead of the Greek Vinagerette dressing I used Greek Dressing with Feta ( I already had that) and I used boneless/skinless chicken tenderloins. It was wonderful and so tastey!! I also added a little of the parsley too.

Rated 4 out of 5 by from The chicken was excellient! The chicken was excellient!! Great flavor and the dressing turned into a gravy, which was good. But I didn't like it with the rice. It just didn't taste right. I will make this again but only without the rice and eat other sides with it.

Rated 4 out of 5 by from My family liked this recipe, but it was a bit runny. My family liked this recipe, but it was a bit runny. Didn't thicken up as per recipe. I will cut down the broth next time. Chicken falls off the bone and is very tasty. Need to skim the fat also.
