  • Beat cream cheese, 1 cup of the feta cheese and milk in small bowl with electric mixer on medium speed until well blended. Spread into 9-inch pie plate.
  • Top with layers of spinach, tomatoes, onions and olives; sprinkle with remaining 1/4 cup feta cheese. Cover.
  • Refrigerate several hours or until chilled. Serve with tortilla chips.

How to Soften Cream Cheese

Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.

Could not find Athenos Feta cheese with Basil & Tomato at the grocery store so used just plain Feta with a pinch of sugar and a heap of basil. Used cherry tomatoes from the garden and sliced them thin. Also used normal Green Spanish olives sliced thin instead of black ... hubby did the shopping for me. Was excellant anyway!

Very good, but I would skip the spinach next time and add in another kind of veggie ... it just made it too soggy and 'slimy-fish-tankish' --- maybe zucchini or red bell peppers or something else --- it was just too much with the spinach (maybe fresh would be better???) --- otherwise it would be superb.

There wasn't a bit of the dip left and many people asked for the recipe. The only thing that I did was add more veggies I thought that there was too much spinach so I added more onions tomato's and olives

This dip cost over $20 to make, and that was with the feta cheese buy one, get one free! It was such a mess trying to beat the feta in with the cream cheese. Hardly any of it went at the BBQ we attended. I was embarassed that I even brought it!

Rated 5 out of 5 by from This dip is awesome! This dip is awesome! Every year for Christmas Eve we do a huge appetizer buffet instead of a meal. This is the ONLY dip that has to be on the menu! I make it with lite cream cheese so we can eat more ;-) It's really terrific with pita chips.
