Mesquite Pork Chops with Roasted Vegetables

Pork chops with a mesquite-flavored crumb crust are roasted to tender, juicy perfection on a bed of harvest veggies—and a tart-sweet Fuji apple.

What You Need

1-1/2
lb.  sweet potatoes (about 3), peeled, coarsely chopped
1
large  red onion, cut into thin wedges
1
 Fuji apple, chopped
1
Tbsp.  honey
1
Tbsp.  chopped fresh thyme
1
Tbsp.  olive oil
6
 thin cut boneless pork chops (1-1/2 lb.)
1
pkg.  (6 oz.) FRESH TAKE Smokey Mesquite BBQ Recipe Cheese Breadcrumb Mix, mixed together

Make It

HEAT oven to 375ºF.

COMBINE first 6 ingredients, spread onto foil-covered rimmed baking sheet.

MOISTEN chops with water; coat with cheese mixture as directed on package. Place over vegetable mixture.

BAKE 30 min. or until chops are done (145ºF). Remove from oven; let stand 3 min. before serving.
