A cheesy sauce made with green chile-spiked diced tomatoes and a blend of spices gives these tasty appetizer meatballs their Mexican-style flavor.

What You Need

2
lb.  lean ground beef
1
cup  fresh bread crumbs
1/2
cup  finely chopped onions
3
cloves  garlic, minced
2
 eggs, beaten
1
tsp.  each ground cinnamon and ground cumin
2
Tbsp.  butter or margarine
1
cup  water
1/2
lb.  (8 oz.) VELVEETA®, cut into 1/2-inch cubes
1
can   (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
5
cups  hot cooked long-grain white rice
2
Tbsp.  chopped fresh cilantro

Make It

MIX meat, bread crumbs, onions, garlic, eggs and seasonings just until blended; shape into 24 meatballs.

MELT butter in large skillet on medium heat. Add meatballs; cook 5 min. or until evenly browned, turning frequently. Add water; cover. Simmer on medium-low heat 15 min. or until meatballs are done.

MEANWHILE, cook VELVEETA and tomatoes in saucepan on medium heat until VELVEETA is completely melted and mixture is well blended, stirring frequently.

DRAIN meatballs. Spoon rice onto large platter; top with meatballs and sauce. Sprinkle with cilantro.

Variation
Prepare using extra-lean ground beef and 2% Milk VELVEETA.
Make Ahead
Prepare meatballs as directed; cool completely Place in resealable freezer-weight plastic bag. Freeze up to 2 weeks. When ready to use, remove from freezer and place in refrigerator for 6 to 8 hours to thaw. Place in shallow baking dish. Bake in 350°F oven 15 minutes or until heated through. Meanwhile, prepare VELVEETA sauce as directed. Serve over rice and meatballs as directed.
