  • Heat oven to 375ºF.
  • Brown meat in large nonstick skillet;drain. Return meat to skillet.
  • Reserve 1 cup cheese for later use. Add remaining cheese and all remaining ingredients to meat; mix well.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray; cover.
  • Bake 40 to 50 min. or until rice is tender. Top with reserved cheese; bake, uncovered, 5 min. or until melted.

I printed this for him to try, and he said this was very easy to make. He made it exactly as stated. The whole family enjoyed it (including the 2-year-old). I just finished eating some of the leftovers for lunch.

Rated 4 out of 5 by from If you're in a hurry, it cooks faster on stovetop. My family really liked this. However, instead of putting it in the oven for 50 minutes, I used a dutch oven, or a deep skillet would work, browned the gr beef in that and added the rest of the ingredients except for the cheese. Bring to a boil. Put on a lid and simmer for about 20 minutes. The rice (I used basmati) was perfect. I added the cheese on top, put the lid back on for a few minutes until it melted. A one pot dinner in under a half hour.

It took 55 minutes for the rice to be soft. And I did add extra cheese. I would make it again but add beans and maybe onions.

Rated 5 out of 5 by from I love it!!! I made this recipe last night. With a few tweaks. I used kidney beans instead of vegetables. I only used 2 tbls of the taco seasoning and cheddar jack as this is what was on hand. Everything else was the same. It turned out perfect.

I used ground chicken, sautéed it with green peppers, onions and garlic. I didn't have white rice but i had a box of Zattarains dirty rice. I cooked the rice for about 15 minutes, combined it with the chicken and added a can of black beans. I also added cheddar cheese and a 1/2 block of cream cheese and the spicy salsa i had in the fridge. This was excellent!

I don't know if it was because there wasn't enough liquid or because I baked without covering as I didn't notice the recipe says to cover. I will definitely attempt this recipe again as it was a quick and easy weeknight meal for my family.

I omit the mixed veggies as we prefer to stack veggies (green pepper, lettuce, tomato, etc) on top of dish and serve it with tortilla chips.

I used 3/4 cup in the casserole and 1-1/4 cups for the top. Perfect. Also, I cooked about 1/2 cup chopped onions when browning the beef.
