  • Heat oven to 375ºF.
  • Brown meat in large nonstick skillet; drain. Return meat to skillet.
  • Reserve 1 cup cheese for later use. Add remaining cheese and all remaining ingredients to meat; mix well.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray; cover.
  • Bake 40 to 50 min. or until rice is tender. Top with reserved cheese; bake, uncovered, 5 min. or until melted.

I did add a chopped onion (as did many other) to the hamburger as it browned. I left out the mixed vegetables (didn't have any on hand) and instead used a can of black beans and a can of whole kernel corn, both drained and rinsed. I would make this again and this recipe will probably go into my rotation of weeknight meals.

Rated 5 out of 5 by from Fast and delicious! My hubby couldn't stop eating this. It was so fast. I did add chopped onion when I cooked the hamburger. Instead of the frozen veggies, I hate frozen carrots, I chopped up a large green pepper and added it just a minute before I was done browning the meat. I also added a can of corn with the liquid. Next time, I'll not use the liquid. I added some extra cheese too. It is just a bit salty, so the low salt stuff is probably important.

I printed this for him to try, and he said this was very easy to make. He made it exactly as stated. The whole family enjoyed it (including the 2-year-old). I just finished eating some of the leftovers for lunch.
