  • Place chicken in large skillet sprayed with cooking spray; top with salsa. Pour broth around chicken in skillet. Bring to boil on medium-high heat; cover. Simmer on medium-low heat 10 min. or until chicken is done (165ºF).
  • Stir in rice; sprinkle with cheese.
  • Simmer, covered, on low heat 5 min.

Substitute

Substitute 6 oz. VELVEETA®, cut into 1/2-inch cubes, for the cheddar cheese. Stir before serving.

Rated 5 out of 5 by from Very simple and delicious! Very simple and delicious! Before following the recipe, I seasoned the chicken and browned it lightly; also added sliced onion. Then followed recipe as directed. One side note, I used brown rice instead of white; follow directions on box for liquid amount instead of recipe. Switch up the salsa for a better flavor as well. I feel all recipes need tweaking to suit different tastes.

Rated 5 out of 5 by from i was very thankful and genuinely surprised with the taste of this dish after the few revisions and... i was very thankful and genuinely surprised with the taste of this dish after the few revisions and substitutions i had to make. i only had cut up rotisserie chicken, so instead of recooking it with the broth/salsa, i added it in with the rice and cheese and let it simmer. i also only had pineapple salsa, so i added a pinch of cumin, chili powder, and crushed red pepper. i also ended up throwing in some chopped green pepper. it turned out way better than i had hoped. ill definitely plan on this one, again.

I ended up pre-cooking my chicken (I make extra for my dog) and not having the Minute rice, so instead, I combined the cooked chicken, plain white rice, the salsa, and a whole can of chicken broth and simmered it for 15 minutes or so. My husband (who is picky, but tries for my sake) ate it with me, and he's not shy about saying anything is bad! I'll definitely be making this again!

Rated 4 out of 5 by from I cooked the chicken a little longer than the ten minutes that this recipe calls for. I cooked the chicken a little longer than the ten minutes that this recipe calls for. Maybe i am a little paranoid. I also cut it into strips. Will sear it in oil next time. There was plenty of flavor, but we added a can of corn, drained of course. We also used a mexican cheese blend instead. Tha salsa is not overpowering like i thought it would. Other than that it was a easy and tasty meal.

I made 2 small changes---searing the chicken on each side in a tiny bit of oil, to lock in moisture and add a little extra flavor; I also added a can of corn (drained of course) to the skillet mixture. My kids Loved it too! Will definitely make this one again!

When I added the rice I got some in the salsa, so I scooped the salsa off the chicken and into the rice and added a bit more salsa on the chicken before adding the cheese. I will definitely make this again!

Definitely a big compliment. He said his mom added chopped potatos so I'm going to try adding that next time. Thank you Kraftfoods.com!

Rated 5 out of 5 by from EXCELLENT and EASY! EXCELLENT and EASY!!!!!! I also added 1 can of drained kidney beans and about 1 cup frozen white corn for added veggies and fiber. I also cut back on the cheese to 1/2 a cup. YUM!!!!!!!!! I will definitely be making this one again!
