Variation

Rated 5 out of 5 by from This soup was fantastic. This soup was fantastic. Every month I search kraftfoods.com for recipes to cook for my monthly Board of Directors meetings. I made this soup last month and everyone loved it. I even prepared it at work in the kitchen during the day while I was working. The only change I made was adding the rice to the soup to thicken it up just a bit and I let it simmer in my crockpot on low for about 5 hours while I worked. The smell was heavenly throughout my entire office and everyone (who wasn't attending the meeting) wanted some. I put side dishes out, one with shredded cheddar cheese, another with sour cream, tortilla strips and the last one with tortilla triangles....would definitely make this again

Taking a hint from a local restaurant, I added in crumbled tortilla chips to the top along with a dollop of fat-free sour cream and feta cheese and it is just marvelous --- (trust me, feta adds wonderfully to the flavour of the soup) --- I make it weekly too and just adore it --- for my veggie friends I skip the beef and use kidney beans and it is just as good! --- this recipe is so versatile is is just a base to play with!!!!

You could also add more ingredients such as sliced mushrooms, diced green, red, yellow, or orange peppers, and diced onions. You could even change the meats (chicken or turkey), the broths (chicken or vegetable), or even black or red kidney beans (for vegetarians), and even add spices (cumin, chili powder, corriander, cilantro). My family loved it!!

Rated 5 out of 5 by from Even MY picky family chowed this one down. Even MY picky family chowed this one down. From my 83 yr. old Gradmother to my 10 month old. I used 1 jar med salsa & 1 mild for perfect level of heat. I serve it w/ chunked tomato, olives, avacado, sour cream, hot sauce, and different flavored tortilla chips-to add a personal touch. Try it with leftover chicken and chicken broth instead. An easy throw-togetfer, sure to be a hit at a pot-luck.

Rated 4 out of 5 by from I make this recipe and add my own little "mexican" touches. I make this recipe and add my own little "mexican" touches. Taco seasonings are added to the ground beef. Also added is a can of rotel diced tomatoes and a can of ranch style beans. With all of the juices from each canned ingredient, this makes for a very hearty and flavorful soup. Ladle over tortilla chips, add cheese and sour cream!!! Very good meal.

I added a packet of taco seasoning to the browned meat before I added the other ingredients for more flavor. I also strained the salsa so just the liquid went into the soup because my family are all picky eaters and wouldn't eat the chunks of the salsa. Very good soup to warm you up on a cold day!

The only thing that I would do differently, is to use medium salsa instead of the mild I chose-normally, I don't enjoy too spicy foods, but this dish could handle it I think. It was so simple and delicious, I would advise everyone to try it. Really...

Rated 5 out of 5 by from This was soo good and filling. This was soo good and filling. I added canned pinto beans. Next time I will add pinto beans with jalepanos. It has more flavor, but not the heat. I didn't have beef broth. So I added 1 can of chicken broth. It will be good on those cold winter mornings. One good thing is you have most of the ingredients on hand. Hope it freezes well.
