Mexican Wedding Cookies

What You Need

cup (2 sticks) butter, softened

cup powdered sugar, divided

tsp. vanilla

cups flour

cup finely chopped PLANTERS Pecans

Make It

PREHEAT oven to 350°F. Beat butter, 1/2 cup of the powdered sugar and the vanilla in large bowl with electric mixer on medium speed until light and fluffy. Gradually add flour and pecans, beating on low speed after each addition until well blended.

SHAPE dough into 1-inch balls. Place, 1-1/2 inches apart, on ungreased baking sheets.

BAKE 14 to 15 min. or until bottoms of cookies are lightly browned. Cool 5 min. on baking sheets. Roll warm cookies in remaining 1/2 cup powdered sugar until evenly coated; place on wire racks. Cool completely. Store in tightly covered container at room temperature.

Make it Easy

Use a blender or food processor to finely chop the pecans. Just be careful not to overprocess them or you'll end up with nut butter!

I saw another recipe that used vegetable shortening. I wonder if it taste the same or less tasty? I think butter always has a better flavor though and if butter already has salt in it, I don't use the same amount of salt but less than what it calls for. It depends on every individual.

I make these every year. I had to tweek the recipe. It was too dry so I added 1/4 cup extra of butter, and I only had to bake them at 13 minutes. Other than that, they are always wonderful to add to my gift baskets at Christmas.

Wonderful recipe, mine weren't exactly ball-shaped after baking (flattened out a bit for some reason) but taste was amazing. Made them to give for a gift to a friend but my hubby now wants some just for him.
