  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened.
  • Stir fruit into gelatin; pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold.

How to Unmold Gelatin

Dip mold in warm water for about 15 sec. Gently pull gelatin from around edge with moist fingers. Place moistened serving plate on top of mold. Invert plate and mold; holding mold and plate together, shaking slightly to loosen. Gently remove mold and center gelatin on plate.

Substitute

Substitute cold seltzer for the club soda.

    Made this today for a ladies luncheon and everyone wanted the recipe! Very light and easy. I cut the recipe in half because there were only 10 of us and it was perfect. Next time I think I'll try giner-ale in place of the club soda.

    I love this recipe and make it all the time. It is a great low calorie snack. I can't say it turns out runny only because I never put it in a mold, just make it in a big bowl. I don't always add the strawberries and if I don't I just add 2 cans of oranges. I think it tastes really good with sugar-free peach jello too.
