  • Heat oven to 350ºF.
  • Beat first 5 ingredients in large bowl with mixer until blended. Add bananas and nuts; mix just until blended.
  • Pour into 5 foil mini loaf pans sprayed with cooking spray.
  • Bake 40 min. or until toothpick inserted in centers comes out clean. Cool completely.

Substitute

Prepare using JELL-O Vanilla Flavor Instant Pudding.

How to Store Ripe Bananas

Have too many ripe bananas? Mash bananas, then store 1-cup portions in separate resealable freezer bags. Freeze up to 3 months. Thaw in refrigerator before using to prepare these delicious banana breads.

How to Store

Bake a batch to share! These mini loaves will keep 3 days at room temp or 3 months in the freezer.

Rated 5 out of 5 by from Wow! Wow!!!! So delicious! I am going to give this to neighbors for a christmas gift, it is so amazingly good. I used 4 dark non stick mini loaf pans and it spilled over the top. I don't know if that was because of the non stick dark surface or because of only using 4 instead of 5 pans. I froze the extra loaves and they were just as good when thawed out.

Rated 4 out of 5 by from I just made this. I just made this. I got 6 mini loaves out of it instead of 5. I used vanilla cake and pudding mixes, instead of the yellow cake mix and banana pudding. I also topped the loaves with a little dash of cinnamon and nutmeg. Waiting for them to come out of the oven and see how they turn out.

I am going to try to make other flavors now. I will be making a BATCH of these for my husband to take to the deer lease.

It was too sweet and a fake banana flavor. It was easy, but I will stick with homemade banana bread without the cake mix and banana flavored pudding.

I made banan bread from scratch two weeks before making this one, and this recipe outdid the from scratch recipe by far. Will definitely be making this again!

Its a keeper.It does have to be done in the small pans. Or really check it for the big pans.

Rave reviews! So moist. I used two small loaf pans.Topped with a glaze of powdered sugar, milk and vanilla. Yum!
